How to prepare an espresso in an Italian coffee maker?

Surely you have a traditional Italian coffee maker (also known as a "moka pot," "greca," or "macchinetta") somewhere in your kitchen? Well, bring it back from its obscurity. Today we'll show you how to make a perfect espresso at home.
Patented in 1933 by inventor Alfonso Bialetti, we will use his iconic Moka Express model, which makes coffee by passing steam-pressurized boiled water through ground coffee.
What do you need?
- Specialty coffee (we used Kebele Gotiti, Reliquia variety)
- Scales
- Grinder
- Italian coffee maker
Step by step:
- Open the coffee maker
- Fill the tank with water up to the level of the drain valve. Bring to a boil. Meanwhile, weigh the coffee (11 grams per 100 ml of water).
- Grind the coffee beans in the grinder (medium grind)
- Pour the coffee into the filter without tamping it.
- Close the coffee maker with the help of a kitchen cloth
- Reduce the heat to low.
- With the lid open, wait for two fingers of coffee to come out.
- Close the lid
- Put out the fire
- Wait a minute, a minute and a half maximum
