DESCRIPTION
The Walensuu estate is located in the heart of the Jimma forest, at high altitude. It is the family farm of producer Mesfin Dabessa. To obtain this naturally processed coffee, the ripest cherries were left to dry in the sun on raised beds for twenty days, carefully covered at night and during rainfall. This roast profile for filter brewing brings a medium, balanced body with sweet, chocolatey notes, and a medium-high acidity with juicy hints of orange and peach.

ABOUT THIS COFFEE
Jimma is one of the cradles of coffee. This denomination benefits from a rich natural environment, where coffee grows mainly under the shade of large endemic trees, deep in the forests. The coffee produced here offers cups of outstanding quality and represents an inspiring agricultural model.
That said, Jimma has taken some time to step into the international specialty coffee scene. Thanks to the work and organization of local producers, the true potential of Jimma coffees has been revealed, guaranteeing both traceability and quality.
BREWING RECIPE
We recommend brewing this coffee with filter methods such as Aeropress, V60 or Moccamaster, using a ratio of approximately 1:17 coffee to water to highlight its sweet and juicy notes of chocolate, orange and peach.
